Diabetes-friendly Recipes

Minced Pork with Pine Nuts and Water Chestnuts

Minced Pork with Pine Nuts and Water Chestnuts

Ingredients:

  1. Pork fillet 160 g
  2. Pine nut 10 g
  3. Carrot (chopped) 20 g
  4. Water chestnut (diced) 3 pcs (60 g)
  5. Dried scallop (diced) 10 g (Soaked until tender)
  6. Oil 2 tsp

Seasonings for pork fillet:

  1. Soy sauce 2 tsp
  2. Sugar 1⁄4 tsp
  3. Chinese cooking wine 1 tsp
  4. Cornstarch 1⁄4 tsp
  5. Water 1 tbsp
  6. Sesame oil 1⁄2 tsp

Thickening:

  1. Cornstarch 1⁄2 tsp
  2. Water 2 tbsp

Method:

  1. Rinse and chop the pork fillet. Mix with the seasoning for 30 minutes.
  2. Stir-fry the pine nuts and set aside.
  3. Heat 2 teaspoons of oil in a wok / pan. Stir-fry the tendered scallops first, and then the pork fillet, water chestnut and carrot until they are hot and done. Add the thickening sauce and pour the wine down the side of the wok / pan. Sprinkle with the pine nuts and serve.
