Baked Chicken with Lemongrass and Garlic

(Serves 4)(Source of recipe: dietitian of the Department of Health)
Baked Chicken with Lemongrass and Garlic

Ingredients:

  1. Chicken thighs 2 pcs (approx. 320 g)
  2. Garlic 5 cloves

Marinade:

  1. Lemongrass, finely chopped 1 stalk
  2. Salt ½ tsp
  3. Sugar ½ tsp
  4. Chinese cooking wine 2 tsp
  5. Cornstarch 1 tsp

Method:

  1. Rinse the chicken thighs, and remove the fat. Mixed well with marinade for about 30 minutes.
  2. Preheat the oven to 200°C.
  3. Rinse and slice the garlic, and layer the slices in a baking pan. Put the chicken thighs on top of the garlic. Bake for about 30 minutes.
  4. Remove the pan from the oven and turn the chicken thighs over, then continue baking until the chicken thighs are cooked thoroughly.
  5. Remove the pan from the oven and skim the fat off the chicken thighs. Remove the skin and the bone, and chop the thighs into smaller pieces. Layer the garlic slices on top of the chicken pieces.
