Pumpkin Pancake with Spring Onion and Dried Shrimp

Pumpkin Pancake with Spring Onion and Dried Shrimp

Ingredients:

  1. Pumpkin 2 taels (80 g)
  2. Dried shrimps 10 g
  3. Glutinous rice flour 15 g
  4. Rice flour 15 g
  5. Water 4 tbsp
  6. Spring onions, finely chopped 2 tbsp
  7. Cooking oil 1 tsp

Seasonings:

  1. Salt ⅛ tsp
  2. Sesame oil a few drops

Method:

  1. Steam the pumpkin until tender. Mash in a bowl. Add glutinous rice flour, rice flour, salt and sesame oil. Mix well. Stir in the water to form the pumpkin paste.
  2. Soak and finely chop the dried shrimps. Fry to bring out the flavour. Add dried shrimps and finely chopped spring onions to the pumpkin paste.
  3. Heat 1 teaspoon of oil in a pan. Divide the pumpkin paste into 6 equal portions. Fry over medium heat until both sides turn golden brown.
