Diabetes-friendly Recipes

Basil Salmon Hash Browns

Basil Salmon Hash Browns

Ingredients:

  1. Salmon fillet, diced 60 g
  2. Potato 1 pc (approx. 140 g)
  3. Basil, finely chopped a few leaves
  4. Parsley, finely chopped 2 tsp
  5. Pine nuts, finely chopped 1 tsp
  6. Cooking oil 2 tsp

Marinade:

  1. Salt ¼ tsp
  2. Black pepper ⅛ tsp
  3. Cornstarch 1 tsp

Method:

  1. Peel and grate the potato. Put in the salmon cubes. Add the marinade and mix well. Add the fine chopped pine nuts, parsley, and basil leaves.
  2. Divide the salmon mixture into 8 equal portions. Fry in a pan until both sides turn golden brown.
