Diabetes-friendly Recipes

Taro and Red Bean Pudding

Taro and Red Bean Pudding

Ingredients:

  1. Taro 160 g
  2. Red beans 2 tbsp
  3. Sugar 3 tbsp
  4. Skim milk powder 3 tbsp
  5. Glutinous rice flour ½ cup
  6. Rice flour ½ cup
  7. Water 1 cup (240 ml)
  8. Coconut flakes 15 g

Method:

  1. Soak the red beans in water for 2 hours. Put in a pot and boil until tender and then drain off the water and set aside.
  2. Shred the taro and put in a bowl. Add glutinous rice flour, rice flour, skim milk and sugar. Mix well with water and the red beans. Brush oil in a 6 inches x 6 inches square cake basin and put the mixture in. Steam over a medium to high heat for 30 minutes.
  3. Cut the pudding into 16 pieces when cools down. Sprinkle with coconut flakes and serve.
