Diabetes-friendly Recipes

Pumpkin Rice Cakes

Pumpkin Rice Cakes

Ingredients:

  1. Pumpkin (without peel) 80 g
  2. Sugar 2 tsp (8 g)
  3. Rice flour 30 g
  4. Glutinous rice flour 30 g
  5. Cooking oil 1 tsp

Filling:

  1. Chestnut (without shell) 50 g
  2. Chestnut water 1- 2 tsp
  3. Sugar 1 tsp

Method:

  1. Boil the chestnuts with water just cover them until tender. Drain off the water and crush the chestnuts. Add sugar and chestnut water to become the filling.
  2. Cut the pumpkin into pieces and steam until tender. Drain off the water. Add in sugar, rice flour and glutinous rice flour and knead to soft and non-sticky dough.
  3. Divide the dough into 12 pieces. Put in the filling and knead each dough to form the ingot shape. Steam over hot water in medium heat for 10 minutes. It becomes a festive snack for the Lunar new year, serve hot or warm. Reheat and serve after refrigerated if prepared in advance.
