Diabetes-friendly Recipes

Braised Vegetarian Shark’s Fin Soup

(Serves 4) (Source of recipe: dietitian of the Department of Health)
Braised Vegetarian Shark’s Fin Soup

Ingredients:

  1. Vermicelli 1 tael (40 g)
  2. Dried Chinese black mushroom ½ tael (20 g)
  3. Dried Wood Ear ½ tael (20 g)
  4. Canned bamboo shoot 2 tael (80 g)
  5. Dried white tofu 2 pcs (approx. 70 g)
  6. Vegetable oil* 3 tsp
  7. Water 6 cups (1440 ml)

* Vegetable oils such as peanut oil, canola oil and corn oil, etc.

 

Seasonings:

  1. Salt 1⁄3 tsp
  2. Soy sauce 1 tbsp
  3. Sesame oil ½ tsp
  4. Sugar ½ tsp

Thickening:

  1. Dark soy sauce 1 tsp
  2. Cornstarch 1 tbsp
  3. Water ½ cup (120 ml)

Method:

  1. Soak, drain and section the vermicelli.
  2. Soak, trim, rinse and shred the mushrooms and wood ear.
  3. Rinse and shred the bamboo shoots and tofu.
  4. Heat the oil and stir-fry the mushrooms and bamboo shoots gently. Set aside.
  5. Boil an appropriate amount of water. Add in the mushrooms, wood ear, bamboo shoots and tofu and simmer for a while. Then put in the vermicelli and the seasoning sauce. Bring to boil and stir in the thickening sauce.
