Diabetes-friendly Recipes

Walnuts with Chinese Black Mushrooms

(Serves 4) (Source of recipe: dietitian of the Department of Health)
Walnuts with Chinese Black Mushrooms

Ingredients:

  1. Walnut 1 tael (40 g)
  2. Dried Chinese black mushroom 8 pcs (approx. 17 g)
  3. Dried white tofu 6 pcs (approx. 210 g)
  4. Water chestnuts 8 pcs (approx. 60 g)
  5. Green beans 4 taels (160 g)
  6. Ginger 2 slices
  7. Vegetable oil* 2 tsp
  8. Water ½ cup (120 ml)

* Vegetable oils such as peanut oil, canola oil and corn oil, etc.

 

Thickening:

  1. Salt 1⁄4 tsp
  2. Soy sauce 2 tsp
  3. Dark soy sauce 1 tsp
  4. Sugar 1 tsp
  5. Cornstarch 1 tsp

Method:

  1. Soak the walnuts in boiling water for about 20 minutes. Drain well and toast in an oven until golden brown.
  2. Soak and trim the mushrooms. Rinse the tofu. Peel, rinse and dice the water chestnuts.
  3. Rinse and dice the green beans. Then blanch them and drain well.
  4. Fry the ginger with oil. Stir in the mushrooms, tofu, water chestnuts and green beans. Add in 1/2 cup of water to simmer for a while. Stir in the thickening sauce and then the walnuts.
