Diabetes-friendly Recipes

Stir-Fried Garlic Eggplants

(Serves 4) (Source of recipe: dietitian of the Department of Health)
Stir-Fried Garlic Eggplants

Ingredients:

  1. Minced lean pork 4 taels (160 g)
  2. Eggplant 1 pc (approx. 240 g)
  3. Garlic, finely chopped 2 tsp
  4. Vegetable oil* 1½ tbsp

* Vegetable oils such as peanut oil, canola oil and corn oil, etc.

 

Marinade for pork:

  1. Soy sauce 2 tsp
  2. White pepper a pinch
  3. Sugar ½ tsp
  4. Cornstarch ½ tsp
  5. Water 1 tbsp

Seasonings:

  1. Salt ½ tsp
  2. Soy sauce 1 tsp
  3. Sesame oil ½ tsp
  4. White pepper a pinch
  5. Sugar ½ tsp
  6. Water 3 tbsp

Method:

  1. Mix together the minced pork and the marinade and leave to marinate for a while.
  2. Rinse, trim and cut the eggplant into wedges.
  3. Stir-fry the garlic with ½ tablespoon of oil in a non-stick wok/pan. Stir-fry the minced pork to medium well. Take out and set aside.
  4. Fry the eggplants with 1 tablespoon of oil. Add an appropriate amount of water and cook the eggplants until softened. Then add in the minced pork and seasoning sauce and simmer until the pork is thoroughly cooked.
